Our premium artisan pasta is made from 100% Italian durum wheat

Our range of artisan pasta, featuring the beloved varieties "Classica" and "Integrale" (whole wheat), embodies the epitome of art-crafting excellence. Each strand is meticulously crafted from 100% premium Italian durum wheat, meticulously sourced from dedicated farmers in the sun-drenched fields of southern Italy. These farmers are proud participants in the esteemed controlled supply chain project Prime Terre, upholding rigorous standards of quality and sustainability.

The journey of our pasta begins amidst the fertile landscapes of Puglia, Tuscany, and Sicily, where the finest durum wheat flourishes under the Mediterranean sun. It is here, amidst this bounty of nature's blessings, that our pasta acquires its unparalleled depth of flavor and character.

As artisan pasta makers, known as "pastai" and "sfogline" in Italy, we take great pride in transforming this exquisite wheat into pasta masterpieces that captivate the senses. We procure our Einkorn wheat from the pristine fields of the South West of England, where it is cultivated without the use of chemicals or pesticides. This commitment to natural farming practices ensures that our pasta not only maintains its nutritional value but also boasts a deliciously nutty flavor profile. Einkorn wheat, an ancient grain and precursor to durum wheat, holds a significant place in human history as one of the earliest cereals cultivated by our ancestors.

In our pursuit of excellence, we employ a time-honored artisanal method known as bronze die extrusion to create our pasta, eschewing the commonplace Teflon dies favored by commercial producers. This meticulous process involves passing the dough through bronze dies, a practice deeply rooted in tradition and revered for centuries in Italian pasta-making culture. The result? A pasta with a distinctive, rough, and porous texture that not only captures the essence of authenticity but also serves as an ideal canvas for sauce absorption, ensuring a more flavorful dining experience. How We Make Our Artisan Pasta

Drying Process - Slow and Low

Our Slow and low drying pasta process is a meticulously crafted traditional Italian pasta method that epitomizes the essence of artisanal pasta making. Instead of rushing the drying process, we adhere to the time-honored practice of slow drying, which involves carefully regulating the temperature to a maximum of 38°C.

This gentle approach ensures that our pasta retains its optimal texture and flavor while allowing the flavors to develop fully. It's a labor of love that spans up to 24 to 30 hours, during which each batch of pasta undergoes a gradual transformation, resulting in a superior product that delights the senses and captures the true essence of Italian culinary tradition. The slow, gentle drying process helps preserve the natural characteristics of the durum wheat semolina while giving the pasta its signature al dente texture and nutty flavor.

Traceability

The durum wheat flour that we use to make or Classica and Integrale pasta range is controlled and certified by CSQA, a certification body that operates worldwide in the food industry, public administration, public, social, and sanitary services, tourism, and service industries.

Our Pasta Range

Classica and Integrale: Crafted from 100% premium Italian durum wheat, sourced from regions like Puglia, Tuscany, Sicily, and Campania through the Prime Terre Project.

Organic Einkorn: Made from ancient Einkorn wheat grains, which originated over 20,000 years ago in the Middle East. The flour for this pasta comes from a mill in the Cotswolds, England.

Craftsmanship

Bronze Die Extrusion: Instead of commercial Teflon dies, Capparelli uses traditional bronze dies to achieve a rough, porous texture that holds more sauce.

Slow and Low Drying: Our pasta is slow-dried at low temperatures (38°C max) for up to 24 to 30 hours, preserving flavor and texture.

Ethical Sourcing
